Middle Eastern Lamb Kebabs

Middle Eastern Lamb Kebabs! It’s fragrant, it’s exotic, and it’s fantastic even for a midweek dinner because it’s something different but so easy and quick to make. It is perfect for grilling, especially during al fresco weather in Dubai. Plus you can get the whole family involved! Honestly, doesn’t take more that 30 minutes to make – start to finish.

Recipe (Serves 4 to 6)

 

Ingredients for the Kebabs

1 kg mince lamb

1 medium onion (finely chopped)

4 garlic cloves (finely minced)

1 large green chili (finely chopped)

½ tsp red chili flakes

2 tbs parsley (finely chopped)

1 tbsp cumin powder

1 tsp sumac powder

½ cup grated Grana Padano Cheese

2 tbsp Olive Oil

Salt & Pepper to taste

 

Ingredients for the Yogurt Sauce

1 ½ cups of Greek yogurt

1 garlic clove (minced)

1 tbsp lemon juice

5 tbsp pomegranate seeds

½ tsp cumin powder

Salt & Pepper to taste

 

Ingredients to go on the side

2 sliced red onions

Pita Bread

1 tomato sliced

1 bunch of fresh parsley

 

Method 

Step 1 – Mix together the yoghurt sauce ingredients and place in the refrigerator to allow the flavours to develop.

Step 2 – Place the kebab ingredients except the olive oil in a bowl and use your hands to just combine (don’t over mix).

Step 3 – Apply a little bit of the olive oil on your palms (to avoid the meat from sticking to it). Divide into equal portions and mould onto the skewers.

Step 4 – Grill on BBQ or in the oven.

Step 5 – While the lamb is cooking, slice tomatoes, onions and chop parsley.

Step 6 – Serve kebabs alongside warm pita bread with parsley, tomatoes, red onion and yoghurt sauce on the side. Wedges of lemon are also a great side accompaniment.
