Check out the recipe below.
Recipe (Serves 4 to 6)
Ingredients
1 kg of clams
2 large onions (finely chopped)
2 green chilies (finely sliced)
1-inch fresh ginger (grated)
3 garlic cloves (grated)
1 tsp mustard seeds
1 ½ tsp coriander powder
1 tsp cumin powder
1 tsp turmeric powder
½ tsp red chili powder
1 tsp paprika (mostly for color)
1 can of coconut milk
1 lime
1 bunch of fresh coriander
2 tbsp of oil
Salt and pepper to taste
Method
Step 1 – Clean the clams. Soak them in cold water for 15 minutes with a large pinch of salt. Then lift each clam out of the bowl, and individually rinse with water.
Step 2 – Heat up the oil in a large pot over medium heat. Add the mustard seeds once the oil is hot and wait for it to splutter. Then add the onions, garlic and ginger and sauté for 5 minutes.
Step 3 – Add the spices and stir, then add the coconut milk and bring to a gentle boil. Add clams, cover and cook, stirring occasionally, until clams are opened (discard any unopened clams).
Step 4 –. Sprinkle the clams with coriander and serve with lime wedges and fresh basmati rice or bread for dunking in the curry!
Bon Appetit!
