Raspberry with Almond Clafoutis

Clafoutis is a great French dessert that’s perfect for using up fruit in your refrigerator. It looks elegant and is so simple to make. Use whatever fruit you have on hand, in this case, I used raspberries, whip up a quick batter and bake! It’s guaranteed to impress family and guests!

Recipe (Serves 4 to 6)

Ingredients

Batter ingredients

3 large eggs

250 ml double cream

15 grams white bread flour

130 grams British caster sugar

50 grams ground almonds

1 tbsp icing sugar

30 grams unsalted butter

1 pack of fresh raspberries

(All of the above ingredients can be purchased from the El Grocer App in the M&S recipe section. Just click on the recipe and all the ingredients get added to your basket. Anything extra, you can just add on. Super simple!)

Method 

Step 1 – With a hand blender or food processor, mix all of the batter ingredients thoroughly and let the batter chill for 24 hours.

Step 2 – Remove the batter from the fridge and pre heat the oven to 180 degrees Celsius.

Step 3 – Rub the dish/tray all around the inside with the soft butter and then evenly sprinkle with icing sugar so it sticks to the butter. Place the raspberries at the bottom of the baking dish and carefully pour the batter over the top making sure that the fruit is evenly spaced apart.

Step 4 – Place the dish in the oven for around 30 to 40 minutes till the batter rises and has become golden and crispy.

Step 5 – Remove from oven and let it rest for a few minutes. Serve with a final dusting of icing sugar and/or cream.
