Tresind Studio x Lido 84

Dubai’s critically acclaimed and much loved modern Indian restaurant, Trèsind Studio recently had a four hands chefs dinner. Chef Himanshu collaborated with Chef Riccardo Camanini of Lido 84, number 78 on the World’s Best Restaurant list, to create a special gastronomic menu. It’s no surprise that this event sold out in a matter of a few hours, even after adding an extra seating.  

Chef Riccardo and Giancarlo hail from The World Top 50 Restaurants.  Ristorante Lido 84 and Tresind Studio created a unique 15 course menu that showcased Italian and modern Indian cuisine in the most wonderful way. Every course beautifully complimented the one before. This was a world-class culinary experience and one that will be remembered for sometime to come.

Chef Riccardo Camanini grew up in a small village near Bergamo in Lombardy. At the age of 19, he landed a job working for the legendary Italian chef Gualtiero Marchesi and this is when his calling in the culinary industry came to life. “I fell in love with the design of food and fine dining. I experience a new way of cooking; a cuisine made of art, something that reinterpreted time and space, making the most of both the material and spiritual aspects of a raw ingredient.”

Along with newfound obsession for everything culinary, Chef Riccardo moved to the United Kingdom. He worked with Raymond Blanc at Le Manoir aux Quat’Saisons and with Jean-Louis Nomico, Alain Ducasse’s right-hand man, at La Grande Cascade. It was at the age of 24, when he was offered the position of head chef at Villa Fiordaliso, a restaurant on the shores of Lake Garda, that he decided to return home. Sixteen years later, in 2014, Riccardo along with his brother, Giancarlo, bought a retro lido (outdoor swimming pool) in Lake Garda, and their restaurant, Lido 84, came to life.

Starting off in true Tresind Studio style the first course was Caprese pani puri, one of the two chaat courses on the menu. Next up was the Focaccina – fried perch and cod tripe with honey and bergamot. A wonderful harmony of flavors.

Lido 84’s spaghettoni with butter and dried yeast was one of my favorites of the night. This dish was once described by Alain Ducasse as ‘the best dish he’s ever tasted’ and it has even been exhibited at MOMA in San Francisco! From Chef Himanshu, a spiced chaat gelato sandwich with mint coriander water, the second chaat course of the night and one that definitely needs to be showcased in the next season at Studio! Superb!

Lido 84’s raw cuttlefish, smoked eel butter and Jerusalem artichoke was another highlight of the night. With textures replicating silky sticky rice through cuttlefish that had been glazed with a luxurious smoked eel butter along with Jerusalem artichoke. Mind blown! Studio’s charcoal grilled mushroom skewer with a wild herb marinade was another beautifully executed dish!

Lido 84’s fusilli, pistachio, marinada tomatoes and basil was incredible. Four simple ingredients come together to make one extraordinary dish. And next, Tresind Studio’s signature lamb and coconut stew with Indian sourdough bread and curry leaf pesto. Food for the soul right here.

Lido 84’s fermented black garlic rice with red fruits. Let’s just say, plates were wiped clean. The sweet onion tortellini in an oh-so-declicious buttermilk curry is another dish that needs to be on a future season menu at Tresind Studio. Yes, Chef Himanshu?
And what a way to end the night. Both desserts were incredible. Lido 84’s toasted dark chocolate crust was heavenly. Chocolaty goodness in every bite. And the final course, from Studio, the Indian Bedding Ceremony, beautifully recreated the romance of an Indian wedding. Loved this concept and yet another one that needs to be on a future season menu!
Thank you to the entire team of Tresind Studio and Lido 84 for a spectacular evening! It was an absolute privilege to have been able to experience two supremely talented chefs come together and create magic!

And I for one, cannot wait to see what Tresind Studio has in store for us next! Looking forward to more gastronomical adventures at one of Dubai’s best modern Indian immersive fine dining restaurants.
